Southall Farm & Inn is looking for a Beverage Director & Head Sommelier to help us as we continue our journey to inspire culinary consciousness � showcasing fresh, seasonal fare that highlights the path from seed to plate. Our dining experiences take place just steps from where our ingredients are grown and raised.


Our two restaurants, Sojourner, and January, each evoke a feeling of their own; Sojourner, our center of the life in the Inn, where all are welcome to gather, and our all-day and in-room dining emanates from its kitchen. The vibe is elegant but casual. January, coming soon, will be open exclusively for dinner, with each meal dependent on the season and ingredients available for harvest. It is where our guests will come to share the joy of a meal with family and friends all while watching it all prepared in state-of-the-art open kitchen.


He/She will be a driving force behind the wine offerings of the signature restaurant January, the adjacent restaurant and bar, Sojourner, as well as the interconnected In-room and Cottage dining, Pool and Event experiences. Working closely with the Culinary and F&B Leadership, the Beverage Director & Head Sommelier will represent the Food and Beverage team with honor and professionalism. The individual will be instrumental in the creation of the Beverage program at Southall including Seasonal Cocktails for all F&B outlets of the resort and drive the entire wine cellar management and spirit collection.


Responsibilities


The Beverage Director and Head Sommelier�s responsibilities will include the wine management of Southall�s flagship restaurant as well as the following areas:



  • Wine management for Restaurant and bar, Sojourner, In room and cottages as well as the Orchard (Event center)

  • After-dinner/Digestive cart experiences

  • Food and Beverage programming such as F&B demonstrations in the Jammery

  • Responsibilities will include sourcing of wines for the extensive cellar that complement the culinary point of view of each F&B outlet, creation of training programs for team member, creating spreadsheets for inventory and ordering, building relationships with strategic partners, and assisting the Director of Dining with all aspects of a luxury resort and restaurant operation

  • The responsibilities will include but not be limited to: Scheduling, inventory, product ordering, daily and weekly staff trainings, managing the staff, and maintaining the highest levels of quality and control possible

  • Able to manage the wine cellar and rare spirits collection beverage cost, and operating costs should be monitored and kept in line

  • Able to maintain an accurate wines list with correct vintages and no �out of stock� wines but conducting frequent inventories

  • Must keep up to date on trends and new releases to keep the cellar stocked and current

  • Works well with vendors and establishes meaningful relations to ensure Southall is getting the best deals and hard to find/allocated wines to reduce cost and drive profitability

  • Creates non-alcoholic parings with the nightly pre-fix menu



Skills and Experience



  • Minimum of 4-6 years in the industry with a focus on fine dining and specialized in all aspects of wine service as well as food pairing



  • Sommelier Certifications

  • Binwise, Simphony and Opera software knowledge is preferred

  • Award winning background and track record of excellence and success

  • Understanding and ability to create an award-winning wine program in concert with the culinary team

  • Effective management of budgets and P&L to achieve overall profitability

  • Polished verbal and written communication, fluent in English

  • Excellent training skills, positively interacts with all team members and guests

  • Detail orientation and able to maintain a surgical clean work environment

  • Polished and professional appearance

  • Plugged into industry trends and inventive to set new trends

  • Customer service oriented with unquestioned hospitality skills. Ability to form strong bonds with repeat customers and creates unforgettable experiences

  • Ability to work a flexible schedule to include weekends and holidays as necessary

  • Ability to meet physical and mental requirements of the position which will include working indoors and outside


Education and Requirements



  • 4-year college degree preferred, but combination of education and relevant position training and experience will be considered.

  • Must be able to push, pull and lift 50 lbs

  • Available to work weekends, evenings and/or holidays

  • Must be able to walk and stand for prolonged periods as needed and able to work in all weather conditions
